Best Mexican Breakfast Recipes

1. Mexican Scrambled Eggs

Mexican scrambled eggs are a typical breakfast dish prepared by breaking an egg’s yolk into a pan and cooking it with peppers, onions, and spices.

The eggs can be served plain or with tortilla strips.

The result is a unique texture, with tiny curds of egg suspended in the mix. This texture makes Mexican scrambled eggs an ideal appetizer or side dish for many dishes, and they can be used as the base of a variety of main dishes like omelets and quesadillas.

It’s not uncommon to see this meal on the breakfast menu in many Mexican restaurants worldwide.

2. Chilaquiles (Mexican Fried Corn Tortilla)

Chilaquiles are a traditional dish in Mexico, made with fried tortillas and a variety of other ingredients.

They are usually cooked with pork, but they’re also commonly made with chicken, beef, goat meat, or diced avocado, sour cream, and other vegetables like bell peppers and tomatoes.

Some people like to add cheese to their chilaquiles; others do not. However, most recipes call for salsa Roja (red sauce) or salsa verde (green sauce).

Furthermore, Chilaquiles can be served as an appetizer or side dish.

3. Mexican Fruit Salad

Mexican Fruit Salad is one of the best fruit salads in the world. It is delicious and perfect for any kind of meal. It contains fresh fruits, vegetables, spices and flavors that make it a real taste sensation.

The recipe has many ingredients, but it is worth trying because it can be easily made. You only need to add all the ingredients into a bowl and mix them well with a spoon or fork. You can serve this delicious dish with any kind of bread, such as rolls or croissants.

I love this particular breakfast idea because there are no rules on what ingredients to use.

But you could try this:

  • 1 cup yogurt (or Greek yogurt)
  • 1 cup blueberries
  • 1 banana, sliced into bite-sized pieces
  • 1/2 cup strawberries, sliced in half
  • 1/4 cup pineapple chunks
  • 1 lime juiced (about 1 tablespoon)
  • 2 tablespoons honey
  • 3 tablespoons granulated sugar or brown sugar (or substitute agave nectar)

4. Breakfast Burrito

A Mexican Burrito is a tortilla filled with beans, rice, sour cream guacamole, cheese, and salsa.

It’s traditionally served as a breakfast or lunch dish in Mexico but has become a breakfast staple in the United States as well.

The most common way to prepare a burrito is to use tortillas instead of bread, prepare the ingredients ahead of time, assemble them while they’re still warm, and spread it with traditional sauces like red Enchilada or green Salsa.

Or you can assemble it while they’re hot off the grill or stovetop.

Either way, this is one of those recipes that will leave your family wondering why you’ve been making such a fuss over breakfast all their lives!

5. Migas (Mexican Scrambled Eggs With Crispy Tortilla)

Migas is a delicious and filling breakfast dish. It consists of tortillas, scrambled eggs and cheese, sour cream, cilantro, guacamole, and salsa.

Every Mexican family has their version of this breakfast dish with slight variations.

You can make your migas or buy them ready-made.

But the most important thing about migas is that they should be nice and spicy; without that spice, they’re just eggs on top of pancakes.

So if you’re worried about making this recipe look like an authentic Mexican breakfast meal, don’t be! Just get some fresh cilantro, diced tomatoes, and sliced jalapeños and stir them into the mix with salt and pepper, so the flavors are bursting on your tongue!

6. Molletes (Mexican Beans And Cheese Flatbread)

Molletes are a sandwich that originated in Mexico and have since become popular worldwide. They are typically made with tortillas or bread dough but can also be made with other flatbreads like pita or wraps.

You will find a variety of fillings, including cheese, beans, and avocado in Molletes, which makes it a chewy, savory, and hearty breakfast that is perfect for any time of day!

It is a great way to start your day because they provide lots of energy and protein. They are also high in fiber, so they help you feel full longer than other types of food.

7. Huevos A La Mexicana (Mexican Scrambled Eggs)

Huevos A La Mexicana is a delicious breakfast or brunch recipe for weekend mornings. The combination of eggs, salsa, and tomato sauce makes this dish a classic that will never go out of style!

This recipe calls for green onions, but you can also use scallions instead.

You can use any type of cheese for this recipe, but we recommend using cheese because it gives this dish its unique flavor.

And it can be served as a meal or appetizer.

8. Taco

If you’re searching for a hearty meal that can be prepared in a matter of minutes, look no further than a taco.

The traditional taco is made from flour tortillas, topped with refried beans and cheese. Other common ingredients include sour cream and salsa.

Other breakfast ideas for tacos include burritos or eggs with tomato sauce, potato and cheese omelets, and an English muffin topped with ham and cheese or sausage patties.

If you want something even more exciting, you can add some avocado or guacamole too!

9. Papas Con Chorizo (Mexican Chorizo And Potatoes)

Papas Con Chorizo is a type of breakfast sausage made with chorizo and potatoes.

The pork, paprika, and cayenne are all the same as in traditional chorizo, but adding potatoes makes for a more flavorful sausage.

Papas Con Chorizo is served with eggs and toast, or it can be added to scrambled eggs. It’s also great on top of nachos!

10. Quesadillas Fritas (Fried Quesadillas)

Quesadillas fritas are an easy way to get a bit of everything in your breakfast. They’re a great way to make use of leftover tortillas, or they can be made with fresh tortillas, depending on how much time you have.

The quesadillas can be filled with scrambled eggs, beans, cheese, salsa, or any other combination you’d like. You’ll find them stuffed with deliciousness in the mornings!

11. Menudo (Mexican Tripe Stew)

Menudo is similar to Italian tripe. The tripe is shredded and then boiled in water until tender. It’s traditionally eaten for breakfast, but you can also serve it as an appetizer or as part of the main meal.

It is made from beef and chicken tripe, which are boiled together with other ingredients in a broth. Menudo also contains chorizo, which is a type of sausage made with pork.

Menudo was first introduced to Mexico by Spanish conquistadors in the 16th century. It is believed that they brought it back to Spain with them after they conquered Mexico.

This dish is commonly served on holidays like Thanksgiving or Christmas because of its festive atmosphere and festive food items that are served alongside it, like candied yams or poached eggs.

12. Mexican Breakfast Casserole

The best way to make a Mexican Breakfast Casserole is with tortillas. You can use either corn or flour, but we prefer corn. It’s just easier to find, and it works better with the other ingredients in this recipe.

Tortillas are important because they help hold everything together while allowing you to add any kind of meat you want.

You can add ham if you want, but we like to keep it simple with sausage links. We’ve also tried bacon and chorizo, and they all work well!

We prefer using sausage links for our Mexican Breakfast Casserole because they’re easy to find at any grocery store and are usually cheaper than ham or bacon. If you don’t have any handy, feel free to use whatever kind of meat you’d like!
