I don’t know if it has something to do with its flavor, healthy, and fresh ingredients. But if there is one thing I’m sure of, it is among the most prominent and loved in the world.

And if your breakfast used to be a boring part of the day, now it will be much more fun since what we’re about to discuss will add a yummy, healthy twist to your typical morning routine.

1. Mexican Scrambled Eggs

Mexican scrambled eggs are a typical breakfast dish prepared by breaking an egg’s yolk into a pan and cooking it with peppers, onions, and spices.

 The best way to make a Mexican Breakfast Casserole is with tortillas. You can use either corn or flour, but we prefer corn. It’s just easier to find, and it works better with the other ingredients in this recipe.

Tortillas are important because they help hold everything together while allowing you to add any kind of meat you want. 

You can add ham if you want, but we like to keep it simple with sausage links. We’ve also tried bacon and chorizo, and they all work well!

We prefer using sausage links for our Mexican Breakfast Casserole because they’re easy to find at any grocery store and are usually cheaper than ham or bacon. If you don’t have any handy, feel free to use whatever kind of meat you’d like!
