  • Combine the Sauce ingredients in a bowl and set them aside.
  • Boil a pot of water and cook one minute less than what is called for on the pasta package. And drain, but do not rinse.
  • Combine the flour, Parmesan cheese, breadcrumbs, and Kosher salt in one bowl. In another bowl, whisk the eggs. And coat each piece of chicken with the breadcrumb mixture, then roll it in the eggs and then in the breadcrumbs again.
  • While you prepare the vegetables, allow the chicken to sit on a tray.
  • Heat the butter in a cast iron skillet over medium heat, then add bell peppers, onion, garlic and mushrooms.
  • And cook the vegetables for 3-5 minutes or until softened but not mushy. Then remove the cooked vegetables from the pan.
  • Add the oil and cook the chicken on each side until crispy, golden-brown, and cooked through.
