<p><strong>Step 1</strong></p>



<p>An oven-safe casserole dish should be placed inside the oven after preheating it to 400°F.</p>



<p><strong>Step 2</strong></p>



<p>Remove the chicken off the bone and shred it into bite-sized pieces.&nbsp;</p>



<p>The liquids (or jelly, if it&#8217;s cold) from the bottom of the rotisserie chicken container should be saved. We&#8217;ll add it afterward to the sauce to give it extra flavor.</p>



<p><strong>Step 3</strong></p>



<p>Boiling water should be used to cook the pasta. To hasten the boiling of the water, cover the pot with salt.</p>



<p><strong>Step 4</strong></p>



<p>Melt the butter in a skillet or cast iron pan over medium-high heat before adding the mushrooms.&nbsp;</p>



<p>I like to slice up the remaining vegetables once the mushrooms have started to brown and caramelize so their flavors can come through.</p>



<p><strong>Step 5</strong></p>



<p>Please be advised that if you use shitake mushrooms the same way I do, the stems must be cut off.&nbsp;</p>



<p>They won&#8217;t cook down because of their woody composition.</p>



<p><strong>Step 6</strong></p>



<p>Include the poblano, jalapeño, and small diced yellow bell pepper in the pot. You should also add one teaspoon of salt. To integrate, stir.&nbsp;</p>



<p>The vegetables will soften and wilt in about 4-6 minutes over medium heat.</p>



<p><strong>Step 7</strong></p>



<p>Add two tablespoons of flour to the mixture and thoroughly stir. Remove from the heat after one minute.</p>



<p><strong>Step 8</strong></p>



<p>Include 2 cups of chicken stock and one can of Rotel. When the mixture starts to thicken, add the flour and stir thoroughly.&nbsp;</p>



<p>Turn up the heat and continue stirring until the mixture thickens.</p>



<p><strong>Step 9</strong></p>



<p>The mixture will thicken as it simmers. Add the cream after it has thickened.</p>



<p><strong>Step 10</strong></p>



<p>Include the Velveeta cubes and the rotisserie chicken juice. Make cuts along the lines on the package to make measurement simpler.&nbsp;</p>



<p>Let the Velveeta melt while lowering the heat to low-medium. This procedure takes 6 to 8 minutes to complete.</p>



<p><strong>Step 11</strong></p>



<p>In the casserole dish, combine the pasta and the chicken shreds.&nbsp;</p>



<p>Pour the remaining ingredients on top of the sauce. After adding the cheddar cheese, stir it once more.</p>



<p><strong>Step 12</strong></p>



<p>The cheese will begin to bubble and melt after 10 to 15 minutes at 400°F. if using, serve with cilantro.</p>

<p><strong>More Spice:</strong> If you enjoy spicy food, you may up the heat in the Texas chicken spaghetti with Rotel tomatoes by adding a few chopped green chiles, jalapenos, or even a teaspoon of chili powder.</p>



<p><strong>More meat:</strong> Half a cup of chorizo or bacon is a fantastic addition to this dish.
